Jaggery is comes from different sources… sugar cane, date palm, and coconut. Ayurveda recognises this organic jaggery as a ‘satvic’ food due to it’s calming effect on the mind. Jaggery has balancing properties for both Vata and Kapha doshas. However, those with Pitta dosha should eat it in moderation, as jaggery is heaty.
